This was one of the first salads I created that became a staple for me when I turned to a more whole food, plant based diet. I still eat it regularly today. Super simple with only 6 ingredients. Comes together in 15 minutes. Everywhere I serve it, I get compliments on it. I hope you enjoy it.
Simple Red Cabbage Salad
Red cabbage is part of the cruciferous vegetable family and contains two substances known to fight cancer. Walnuts are high in omega-3. An apple a day...doesn't hurt either.
1/2 head red cabbage, shredded
1 fuji or gala apple, chopped
1/4 cup raisins
1/4 cup chopped walnuts or pecans
1/2 lemon, juiced
dash of celtic sea salt
Combine all ingredients until mixed thoroughly. Add more lemon juice if too dry. Let sit in refrigerator for an hour to combine flavors.
