Ratatouille and Other Delights

I was so excited this week to visit the farmers's market after many weeks of being out of town and returning to a bare refrigerator. Kale, swiss chard, zucchini, tomatoes, garlic, onions, peaches and more were hauled into my kitchen while visions of soups and salads danced in my head. 

I'd like to share two great recipes with you for using some of your garden delights, Pesto Chicken Quinoa Bowl and Garlic Basil Ratatouille. 

The first dish I enjoyed at First Watch, a restaurant that specializes in truly healthy fare. The Pesto Chicken Quinoa Bowl was absolutely delicious. It consisted of cooked quinoa, kale, shredded carrots, house roasted tomatoes, lemon chicken breast, basil pesto sauce, Feta crumbles and fresh herbs. My waitress mentioned that she makes this dish at home because she can't get enough of it. Experiment and have some fun with this recipe.
The second recipe comes from the East End Coops newsletter. I made the Garlic Basil Ratatouille tonight and everyone enjoyed it. Super simple and nutritious.

The Raindrop Technique

You may have heard of the raindrop technique, developed by Young Living's founder, Gary Young. This technique is useful for supporting the immune system, aiding communication in the body, and enhancing relaxation.

As someone who has received and given dozens of raindrops, I absolutely love this combination of soothing movements and massage, and the vitaflex technique, which incorporates 9 essential oil singles and blends. Receiving a raindrop is an amazingly peaceful and yet energizing experience.

Essential oils are first applied to the soles of the feet using the vitaflex technique, and then these same 9 oils are applied to the back using a series of movements including feathering, fanning, tissue pulls, thumb rolls and other motions. The raindrop concludes with a hot compress being applied to the back, driving the oils in, further relaxing muscles and feeling incredible.
Raindrop treatments can be given to children, adults, dogs, horses and other animals. I saw a raindrop demonstration on a horse, who seemed to be loving the experience, while I was in Utah a few years ago. 

We will be having Raindrop training in the Pittsburgh area for those wishing to learn this technique to use with your own family or loved ones. The classes will be 3 hours in length and each participant will both give and receive a raindrop. Space is limited and the location is currently the Springhill Suites in Robinson Township (next to Sam's club). The location may change depending on the number of participants. Tapping Kids' "Natural" Curiosity

Do you have little people in your life that you want to see grow up to be "big and strong"? How do you encourage them to eat healthier options, exercise instead of playing video games, and enjoy the miracle of the human body?

While visiting my grandchildren, my grandsons enjoyed drinking green smoothies, NingXia Red and Power Meal chocolate shakes, and sporting their mustaches. We made snacks with fruits and veggies and they were fun, colorful and creative.
Children are naturally curious and enjoy exploring, asking questions and learning. Capitalize on this natural curiosity by finding adventures to share with them, new foods to try, and interesting discoveries to make.
I feel so blessed to work with a company who has this same philosophy and creates products that are amazingly supportive, healthy and safe for children. I love Young Living's sense of adventure. Pina Colada Smoothie & More

Summer is a great time to enjoy relaxation, celebration and juicy ripe fruits. What better time to sit beside the pool, or on the deck (balcony, in my case) and sip a wholesome, refreshing smoothie?

Pina Colada Smoothie

2 bananas
2 oranges, peeled
1 cup fresh or frozen pineapple
2 cups kale or other greens
2 cups water or almond/coconut milk
¼ cup unsweetened shredded coconut (optional)
1 Tbsp organic, unrefined coconut oil

Add fruit and greens to the blender. Pour in liquid and blend briefly. Add shredded coconut, if desired. While blending coconut, add coconut oil so it will blend well and not stick to the sides of the blender. When smooth, add to glass with a paper umbrella and grab your lounge chair. Yum and fun!
An unusual smoothie that is surprisingly refreshing is the Cilantro Smoothie.  I'd love to know what you think of it.

Cilantro Smoothie
Red Grapefruit – chopped or juiced, seeds removed
Organic seedless cucumber (or remove seeds of a regular cucumber) - 3 to 4  inch piece
Cilantro – 2 Tbsp to ¼ cup fresh
½ lime – juiced, seeds removed
1-2 cups fresh or frozen pineapple
Agave nectar – optional
½ tsp vanilla extract or 1/8 tsp vanilla powder
Big pinch of cinnamon
Small pinch of salt
Simply blend all ingredients in a blender until smooth. No need to add water or other liquid as these fruits have plenty of moisture and great flavor.

No Excuses - Make Your Dreams Happen!

For those of you following the happenings at Young Living's Light the Fire Convention, I apologize for spreading these updates out so far. My days have been filled with grandchildren time, travel and I am finally home where the internet works consistently and I have a bit of quiet time. So here's the final day of convention.

Day three consisted of a longer morning session and an evening concert and dancing.  The morning was filled with humor, as various leaders were "roasted" a little in the "Young Living Entertainment News".  Gary Young talked about the qualities of a true leader, and executives Travis Ogden and Jared Turner shared highlights in regards to the growth and challenges faced by Young Living and the commitment to be a company of excellence. While I experienced the struggles with out of stock items and longer customer service wait times in the fall of 2013, seeing the graphs with the data was startling. Despite incredible growth over the last two years, Young Living's departments have managed to remedy the challenges and create excellent service even as rapid growth continues. 
What I love so much about this company is the way the leaders share transparently, inspire us to personal development, call us to live a life of purpose and integrity, and provide us with resources to make it easier and clearer to do what we love, share these products!
